The truth is, I feel like most of Disney's live-action movies aren't any good—except for Cinderella and Beauty and the Beast; those have been the only good ones

Exactly. Films generally fall below a certain level – they look nice, but you can't tell from the quality. Besides, everything has to be too reminiscent of the original. That's why the best re-adaptations are those that don't have high profit potential – Disney interferes less.
